Ingredients:
• 1-2 cloves Garlic or one shallot, finely chopped
• ¼ C Rice vinegar
• ½ C Sunflower seed oil
• Sea salt to taste
Optional additions:
• Fresh or dried Herbs
• Black pepper
• Hot sauce
• Fresh ginger
• Maple syrup
• Mustard (this will add flavor and help emulsify)
• Salt-packed anchovies, finely chopped.
• Sour cream or yogurt
• Tahini
• Roasted nut or seed oil (walnut, sesame, hazelnut, etc)
Directions
• Place garlic or shallot in a jar, cover with vinegar. Add oil (just the sunflower or the sunflower + other flavorful oil). Mix, add salt to taste. If you like a smooth dressing, combine in a blender and add salt and vinegar until it reaches the balance you prefer.
